As part of the Waterford Festival of Food, Mount Congreve Gardens invites guests to a unique shared-table dining experience celebrating the food, producers, and landscapes of Waterford.
Recognised as Georgina Campbell Visitor Attraction of the Year 2023 and recommended in McKenna’s Guide 2026 for its Estate-to-Plate philosophy, Mount Congreve brings its garden-led approach to the festival through a gathering rooted in season, place, and conversation.
Guests will begin with lunch prepared by Head Chef Jean-Baptiste Du Bois, inspired by Mount Congreve’s 350-metre Estate-to-Plate philosophy - the literal distance between the Stables Café and the historic Walled Gardens. At Mount Congreve, what grows on the estate and how far it travels matters. The menu will celebrate seasonal ingredients from the gardens and carefully sourced produce from local suppliers, reflecting the rich agricultural landscape that defines Waterford and the surrounding region.
Following lunch, guests will remain at the table for a relaxed and engaging panel discussion exploring food, place, and purpose in contemporary Irish cooking. JB will be joined by Estate Director Ray Sinnott and Russ Parsons, the acclaimed former food editor of the Los Angeles Times and a long-standing admirer of Mount Congreve. The conversation will be guided by Georgina Campbell, bringing together perspectives from the garden, the kitchen, and the world of food writing.
Rather than a demonstration or formal lecture, 350 Metres & Beyond is designed as a thoughtful shared-table experience—an opportunity to enjoy good food, meaningful conversation, and a celebration of the people, produce, and landscapes that make Waterford such a remarkable food destination.
